For all infusions, use a full and rounded teaspoon of dried tea.  If you have a scale, this will be about 3 grams.

Green
Water Temperature: 165°F to 180°F (74°C to 82°C) - The top of the water will produce gentle steam, and there will be no bubbles on the bottom of the kettle or pot.
Steeping Time: 3 to 5 minutes.

Oolong
Water Temperature: 190°F to 200°F (87°C to 93°C) - The top of the water will produce rapid steam, and there will be little bubbles forming on the bottom of the kettle or pot.
Steeping Time: 3 to 5 minutes.

Pu’er
Water Temperature: 208°F to 212°F (97°C to 100°C) - "Just off the boil" - This means that after a full rolling boil, remove the water from the heat source and wait for the bubbles to stop coming to the surface of the water.
Steeping Time: 3 to 5 minutes.

Black
Water Temperature: 212°F (100°C) Full, rolling boil
Steeping Time: 3 to 5 minutes.

Herbal or Tisane
Water Temperature: 212°F (100°C) Full, rolling boil
Steeping Time: 7 to 10 minutes.
